Well let’s see. I was born during the Blizzard of 1978 in Lima, Ohio. I have lived in Ohio all my life. I like it here. We have corn fields instead of oceans, overpasses instead of mountains and fog instead of smog. Sure it's not the promise land, but sometimes one doesn't need postcard worthy beauty on the outside to have it elsewhere. I'm a writer for fun, a Paralegal for profession, and while one pays the bills, one feeds my imagination, or perhaps my imagination feeds my writing...either way, Writing is as much of who I am as the color of my eyes, or the way that I smile. Silk



So, one of my best friends, Steph, recently made the leap over to a no gluten, no dairy diet.  I on the other hand, was appalled by the idea.  No muffins, no bagels, no pizza, no milk....I just couldn't foresee future happiness on a diet of soy, rice, veggies and fruit.

However, Steph's milk allergy had her telling me that she switched to almond milk, and I've been curious about what Almond milk would taste like.  I mean, I like almonds, I like milk....perhaps I'd like almond milk.



But could a make the switch?  Could I forsake the teat of my beloved cows for a milk made from nuts?!

And the Verdict is.......{drum roll please}

YES!

Actually Almond milk is really good, AND it doesn't expire until long after gallons of cow milk would come and go!

It's smooth, it's flavorful, but not TOO flavorful, and I got the regular, not flavored or anything....so imagine how good the vanilla must be!

I didn't buy my blueberry shredded mini wheats, and got Rice/Corn Chex instead...that was tough, but I think I can learn to deal.

After making Jerimy and I some delicious Southwest Chicken Salads, and I drank a big glass of Almond Milk, I was pleasantly surprised that I didn't feel bloated, or miserable as I would of normally.  I just felt, content.  And instead of watching TV all night, I was pretty active....I washed the dogs, I worked on the old chandelier I bought for a 'Pinterest' project for Jerimy and I's 'SOMEDAY wedding'....I raked some leaves, I actually had energy.



So while I attempt to continue my journey at reducing gluten from my life, and attempt to intake LESS dairy, I am awaiting a phone call from my Dr., who may or may not be taking me OFF the latest prescription I'm on.  Wish me luck!
